Discover the heart of Nagoya’s brewing culture at Tōshun Shuzō, a family-run sake brewery with over 160 years of history. This exclusive tour grants access to spaces normally closed to the public, where tradition and craftsmanship meet innovation.

Begin inside the atmospheric Edo-period kura storehouse, constructed with timbers originally intended for Nagoya Castle. Here, you’ll see historic brewing tools and documents that have survived for more than a century, offering a rare glimpse into Japan’s fermentation heritage.

The journey continues to the modern brewery, where the tōji, the master brewer, personally guides you through the sake-making process. From November to April, you may even witness active brewing in progress—a rare chance to experience the rhythm of fermentation firsthand. From May to October, you’ll walk through the brewery’s facilities, learning each step of the process from the expert himself.

Following the tour, enjoy a guided tasting of three carefully selected sake varieties, each brewed with different techniques that highlight the depth and diversity of Japanese sake.

To conclude, you’ll receive a bottle of the brewery’s signature label, a sake admired for its refined flavor and versatility, even pairing beautifully with wine glasses. This memorable gift allows you to take a piece of Nagoya’s brewing culture home.

Itinerary

1:30 PM – Meet at JR Shin-Moriyama Station

Meet your guide at the station exit and transfer by taxi to Tōshun Brewery.

1:45 PM – Edo-Period Kura Storehouse Tour

Step inside a historic mud-walled storehouse built 160 years ago. Constructed with timbers once reserved for Nagoya Castle, the kura houses rare brewing tools and documents from over a century ago. Normally closed to the public, this space offers a special encounter with Japan’s sake heritage.

2:30 PM – Brewing Process with the Master Brewer

Tour the modern brewery with the tōji himself. Learn about the sake-making process in detail, and during brewing season (November–April), observe the active fermentation process.

3:45 PM – Guided Sake Tasting

Sample three different sake varieties, each reflecting the craft and technique behind its brewing. Visit the adjacent shop for the opportunity to purchase your favorites.

4:15 PM – Souvenir Sake & Return Transfer

Receive a bottle of the brewery’s signature sake, as a special gift before returning to Shin-Moriyama Station.

4:30 PM – Tour Ends at JR Shin-Moriyama Station
