Nishio is known for being one of the major production areas of matcha along with Uji (Kyoto) and Kyoto proper. The 97% of picked tea leaves is used for Matcha related products in Nishio. Tea ceremony is as part of the samurai culture and Matcha has been used for it. We appreciate Matcha as special tea even today. In Nishio, the matcha used for the tea ceremony is hand-picked one by one so that it does not mix with the leaves of the previous year to maintain high quality. The freshly picked tea leaves of the year are steamed and dried, called “tencha”. Matcha is finely ground powder of Tencha leaves by a stone grinder. and Macha is used in tea ceremony. There is no process of rubbing tea leaves like sencha, and it is made with the same careful cultivation and manufacturing method as gyokuro.
