Step into the warm, intimate space of Suzu-ki, a refined 7-seat counter restaurant, where the philosophy of Japanese cuisine is brought to life. This hands-on culinary experience centers around dashi, the delicate broth at the core of washoku (traditional Japanese cooking). Dashi, often made from kombu (kelp) and katsuobushi (dried bonito), is prized for its umami, the savory fifth taste that forms the essence of Japanese flavor.

Guided by a chef and assisted by an English-speaking guide, you’ll begin by tasting a carefully brewed kombu broth that has been steeped for days using pristine water from Yoro in Gifu Prefecture. Then, you’ll experience the tactile joy of shaving bonito flakes and learn to balance flavor by making your own clear soup.

A short cooking demonstration follows, where the chef prepares dashi-maki tamago (rolled omelet with broth), miso soup, and seasonal vegetables. Afterward, sit down for a relaxed lunch featuring grilled fish, kelp simmered in soy sauce, freshly cooked rice, and the dishes you helped create. 1:00 PM – Meet at Suzu-ki

Arrive at the restaurant and be welcomed by the chef and your English-speaking guide.

1:05 PM – Dashi Tasting & Preparation

Taste kombu broth brewed with Gifu’s pure water, and shave bonito flakes to create your own rich dashi. Learn about the role of umami in Japanese cuisine.

1:25 PM – Make Clear Soup

Use your dashi to make a simple and elegant clear soup with salt and soy sauce.

1:45 PM – Cooking Demonstration
